Absorption is a stage of food processing that follows digestion. In the gastrointestinal tract, the process of digestion is associated with the breakdown of complex biomolecules (i.e., proteins, carbohydrates, and fats) into simple monomer structures including amino acids, monosaccharides, fatty acids, etc. During the process of absorption, these simple bioorganic compounds are transported from the intestine lumen into the blood.
