The enzymes should breakdown proteins of food, but not the walls of the digestive tract. When there is no food in the stomach or intestines, active enzymes could attack their walls, leading to development of ulcers. However, secretion of inactive forms of enzymes allows for the avoidance of this problem. They will be activated only on the income of food, which should be digested.
